One of my family’s all-time favorite summer meals is one that includes these Salmon Burgers. We like to serve them up with fresh avocado, tomato slices, cheddar cheese, mayo & sprouts for a satisfying & oh so easy meal to throw together. I love how the burgers are literally 4 ingredients & how quickly they come together. You can throw them on the grill to keep your kitchen cooler during hot, humid temps, or you can easily pan fry them as well. I’m already thinking about cool, filling summer meals for the days when I hardly feel like heating up the kitchen for a steamy pan of lasagna, & this recipe is pretty much front & center on my list!
Even my almost 3-year-old oogles over these burgers, which I’m pretty excited about. Salmon is a pretty meaty &, well, fishy fish, so the first time we served it to her, I was expecting the worst. Luckily, she chowed down her burger & even asked for seconds! I blame that partly on the fact that the salmon we eat is pretty incredible. One of my brothers lives in Alaska, where he spends a lot of his time hunting & fishing, so he regularly sends down some of his goods for us to share. We’ve obviously purchased salmon from our local grocery stores, but it does not even begin to compare with the gorgeous, rich flavors of fresh caught Alaskan salmon. In fact, it might even be worth the 24-hours of darkness in the winter to be able to eat food as delicious as this… unless of course you have a brother who just sends it to you. That’s even better (thanks Justin!).
It’s also to your benefit to not skimp in the bun department, either. Too many burgers in my life have rested their tasty bodies on tasteless buns, so I’ve made it my personal goal to stop doing that! The buns that we love for burgers are called talame buns from a local bakery (they are also amazing for breakfast-type sandwiches, hamburgers, veggie burgers, etc.). Find a local bakery in town & indulge!
- 1 1/4 pounds skinless salmon fillet cut into 1-inch pieces
- 4 scallions, green onions, or chives
- Kosher salt & ground black pepper
- Desired toppings: avocado, cheese, tomatoes, sprouts, mayo, etc.
Pulse the salmon chunks in a food processor until coarsely chopped & somewhat chunky, then add the scallions to mix. Shape the salmon into 4 nice sized patties & dash with salt & pepper. Grill or pan fry, turning once & cook until opaque (do not squish the burgers).
Serve on a bun with whatever toppings you like.
