Summer drinks, all the time, yes please. Summer drinks with fresh fruit, even better! There’s something so refreshingly beautiful about eating (drinking) real food & that’s one of the thousands of things I love about this Mango Lassi recipe. First off, there are only 2 ingredients (3 if you decide to add milk). I can spell them, pronounce them, & know where to buy them. There aren’t any funky sweeteners or additives in it & it tastes wonderfully fresh, which is what summer-time beverages are all about. I’ve been a big fan of my fruit & vegetable smoothie lately, but sometimes the combined grocery list & several minutes of prep it takes sends me into a pathetic smoothie aversion. Move over, smoothie, because this Mango Lassi recipe is super quick (once you figure out how to cut a mango) & when all you need are 2 ingredients, it’s hard not to stock up like a crazy person while out shopping for the week’s groceries.
Speaking of, if you follow me on Instagram, you may have noticed that on Monday I shared a picture of my weekly grocery run. - 1 large ripe mango
- 1 cup plain yogurt
- optional milk if you like it to be thinner
Cut the mango into bite-sized pieces. Blend with the yogurt & add milk if you'd like (I used Greek yogurt, so it was thick enough to eat with a spoon!).
